Week #3 Meal Plan

My Mom has surgery on Monday and we will be hosting my Dad and sisters while she recovers. This will be a tricky week to navigate in terms of meal planning but I also know that having some homemade meals on hand will be a comfort to everyone. My goal was to choose things that are satisfying and simple to throw together. I’m also expecting the order to get changed up depending on where things are at with Mom’s recovery, so I’m not assigning meals to specific days. Here is what I plan to make this week:

Crockpot Spiral Ham 

I will throw the thawed ham in the crockpot one morning on our way out for the day. Whenever we get home I can slice it up and serve it with veggies and dip on the side and buns for sandwiches.

Perfect Chicken

This is my new favorite way to make chicken (aside from grilling). I plan to make a big batch to keep in the fridge and I’ll also make sure to have frozen veggies on hand to make Honey Bacon Corn and Broccoli for easy sides if we need them.

Kitchen Sink Salads

This is another place where the Perfect Chicken will come in handy. I usually throw whatever we have on hand into these salads. Some of our favorite salad toppings are: dried cranberries, red onion, sunflower seeds, and some sort of cheese.

Friday Night Pasta Dish

This is a new recipe to me, and one I’ve wanted to try for awhile. I’m using gluten-free pasta.

Breakfast for Dinner

Frittata, Bacon, Roasted Potatoes. This was one of our favorite Whole30 meals that we still have often.
