Week #4 Meal Plan


Monday- Breakfast for Dinner (Eggs, Bacon, Roasted Potatoes)

I never got a chance to make this last week so we are having it tonight! I like including meals like this one in the plan because they are easy to reschedule if need be.

Tuesday-  Chickpea Salad

Tom’s at wings so I’m making this old favorite for myself. I always try to make it the night before so the flavors have time to mesh.

Wednesday- Shrimp & Veggie Stir Fry

Tom requested something with lots of veggies this week, so stir fry it is.

Thursday- Perfect Chicken and Roasted Vegetables

The old standby. This meal is quick and simple to throw together and it’s on the lighter side too.

Friday- Homemade Pizza Night

I’m not sure what flavor yet, but I haven’t made pizza in ages so I’m doing it. The perfect Friday night meal, in my opinion.

Saturday- Lightened-Up Chicken and Dumplings Soup

I have a go-to chicken and dumplings recipe that I adore but it’s pretty rich. I’m going to attempt to lighten it up and make it into more of a soup to reduce the guilt factor a bit.
